If you want to make a light dish for lunch but instead of choosing the sometimes expensive option of buying directly from the supermarket, there are ways you can make the perfect dish from the produce in your garden. This fresh tomato salad with French dressing can be made from scratch and is a delicious, inexpensive option.

Ingredients for Fresh Tomato Salad with French Dressing

  • 3lbs assortment of tomatoes, in various colours to bring some life to the dish

  • ½ pint of cherry tomatoes

  • 4 slices of sour dough bread

  • 2 tbls of virgin olive oil

  • 1 clove fresh garlic peeled (for the croutons)

  • ½ clove fresh garlic peeled (for the herb dressing)

  • Salted anchovies ? soaked in water for 30 minutes

  • ½ cup virgin olive oil

  • 2 tbls of parsley, chervil, chives and basil ? all chopped

  • Salt and black pepper

  1. Start off by making the croutons. To do this you should brush the sour dough bread with olive oil on either side, then toast.

  2. Rub the bread with garlic clove.

  3. Next it?s time to tackle the herb dressing. You can use a mortar and pestle with the garlic clove and anchovies, until you create a smooth mix.

  4. Combine all of this with the chopped herbs and add some salt and pepper for extra taste.

  5. Slice your tomatoes and combine with the herb dressing.

  6. Place the slices on top of the croutons.

  7. Drizzle some herb dressing over the tomato slices and around the plate.

  8. Sprinkle the cherry tomatoes and herb leaves as a garnish.

That?s your salad complete. A quick, simple and cost effective side dish or lunch.
